@ECBG   Here is my mother's recipe for Lemon Meringue Pie.

First you will need a baked 9" pie crust. I use the recipe for plain pastry in my old Better Homes and Garden cook book. It is always a perfect flaky crust. I use solid Crisco and King Arthur Flour.

 

        My filling came out runny, it tasted great, but I had to spoon

it, not cut it. I don't know if I did not cook it long enough. I'll have to try again. Maybe I'll compare with other recipes to see if

adjusting the amount of water could make a difference. My mother's always came out perfect.

 

                    Lemon Meringue Pie

7 Tbsp. cornstarch                      1 3/4 cups boiling water

1 1/2 cups sugar                          3 eggs separated

1/2 tsp. salt                                  1/4 cup fresh lemon juice

2 Tbsp. butter                               1 Tbsp. grated lemon peel

                      1 baked 9" pie crust

 

   In pan, mix cornstarch, sugar and salt. Add boiling water.

In double boiler, cook until thick, stirring over boiling water.

Cook for ten minutes, while stirring.

   Beat egg yolks slightly and add a little of the hot mixture to eggs. Stir and pour back into pan. Cook for 2 minutes, stirring.

   Remove from heat. Add butter, lemon juice and peel.

 

    Cool and pour into baked pie crust.

 

     Meringue ( this is best made when weather is not hot and humid).

      Beat 3 egg whites with 1 tsp. lemon juice until peaks form.

Beat in 6 Tbsp. sugar. Spread on top of pie and pull up peaks

with back of spoon. Bake at 350 degrees for 15 minutes.

I haven't had these in decades, and I wouldn't eat them now, but there are three desserts my mom made:

 

1. Strawberry shortcake with shortcake made from Bisquick.  She did something to the top like brushing it with cream or egg white, and then sprinkled sugar on it before baking

 

2. Pineapple Upside-down Cake, made in her round cast iron skillet, served with fresh whipped cream - no spray or Cool Whip

3. A very simple Dropped Peach Cake - it was a yellow cake mix, following box mix in instructions, then a big can of drained peaches were dropped through the batter.  The case was topped with cinnamon and sugar. No frosting.  Served with a nice scoop of good vanilla ice cream. 

 

Not only desserts, but anything my grandma baked.

Apple dumplings with vanilla pudding like cream sauce 

My mother's Queen of trifles, my mothers has been gone many years now... So very rich made with heavy whipping cream a little powdered sugar to sweeten and sliced bananas and vanilla wafers. Sure brings back wonderful memories...
