I always substitute butter for oil in any cake or brownie recipe (box) I make.

I only have olive oil in my pantry and I do bake cakes,with it.

 

Extra Light olive oil has no taste.  That is what I use for cakes.

@jannabelle1  Do you swap out with the same amount?  (1/4 cup oil = 1/4 cup butter?)

To me, birthday cake and olive oil do not mix.

@Laura14 I know it won't fit for this situation, but you should really try making an olive oil, lemon, cornmeal cake one of these days. Different texture, moist and yummy! You'd have to make it from scratch, though, not from a box. Have a good time! Smiley Tongue
