One additional note: You can actually substitute 1 cup of applesauce for both the oil and the eggs if you want to.

I'd think you could taste applesauce in a lemon cake too.  I sure wouldn't use olive oil.

You can use olive oil but I would use a light olive oil not extra virgin.

You can also use butter. It will give it more flavor.

Yes you can also use unsweetened applesauce. I don't know if I would use all applesauce. Try half applesauce with half butter.

Do you have some butter at home also?

@Laura14 - That's probably the best idea; if this were just for an everyday dessert, the substitution might matter less, but for a birthday cake, you don't want to end up with unexpected results. Good luck!

My thoughts exactly @loriqvc.  I'm gonna make the effort since it's for a step sister I haven't seen in 10 years AND I have a rep to protect.  LOL
