Has anyone made David's Sweet Potato Pie without the crust? I am gluten-free from necessity, and wondered if this was possible with the wonderful Temp-tations cookware.

I have such a recipe for cheesecake, and it's always a hit. Plus, you save a little on calories.

Re: CRUSTLESS SWEET POTATO PIE

Sweet Potato Pie

2 (9in.) regular frozen pie crusts

2 ½ cups cooked mashed sweet potatoes

1 stick of unsalted butter, softened

1 ¾ cups sugar

1 teaspoon ground nutmeg

1 teaspoon vanilla extract

2 large eggs

7 oz evaporated milk

Beat the sweet potatoes and butter until mixed, add sugar, nutmeg, vanilla and mix again. Add the eggs one at a time, then add milk slowly. Mix until smooth. Pour into 2-9 inch pie crusts. Bake at 400* for 10 mintues, then reduce the temperature to 350* for 35 minutes or until a knife inserted in the center comes out clean.

Re: CRUSTLESS SWEET POTATO PIE

give this a try without the crust!!! I don't have Temptations, so I'd lightly grease my pie pan before putting in the filling.

I use to make a butternut squash pie without the crust and it was wonderful. Maybe I can find the recipe and post it.

I now have problems finding the frozen butternut squash in a box like I use to.

Re: CRUSTLESS SWEET POTATO PIE

I've turned quiche recipes into crustless quiche by omitting the crust, and it works fine.

I think you could do that with a dessert pie. The custard would still "set up."

(I also have a recipe for cheesecake without a crust that my MIL gave me years ago. We really like that recipe.)

Re: CRUSTLESS SWEET POTATO PIE

A nut crust would be great with sweet potato pie, like this one http://glutenfreegoddess.blogspot.com/2010/11/gluten-free-pumpkin-pie-with-praline.html
