@Flatbush - For cookies, I'd definitely choose vegetable oil. Even though I like olive oil for most savory preparations, its taste in sweet recipes is noticeable and not pleasant to me.

I have been using safflower oil or butter with shortening for cookies so they don't go flat. I don't use Canola.
California Olive Ranch makes an olive oil for baking called Global Blend Mild.
Our mildest Extra Virgin Olive Oil from our California farmers and partner growers in Argentina, Chile and Portugal. The subtle flavor of this oil lends itself to baking, from sourdough bread to chocolate chip cookies.

I mostly use olive oil or avocado oil here, but if a recipe called for Canola oil, I would substitute a vegetable oil for it at least the first time I made the recipe. That's going to give the closest result to what the recipe intends. Once you know that, then you can try other oils and see how you like or can tell the difference.

My DH is my cook, often now he uses Avocado Oil or Grapeseed Oil.

We really don't use enough oil or fat of any kind any more to worry much about it. We do keep and use olive oil, which would be 95 percent of any fat we eat.
On salads even it's mostly lime or lemon juice, or a very good vinegar. Oil -- only once in a blue moon.

Olive oil may be better for you but Not in cookies.
The olive tast is too strong to use in baking, other that maybe to spray your pan/sheet with it.

I forgot I bought some of the Organic Nutiva shortening 0 trans fat. I'm going to try it in cookies to see how it turns out since all butter makes cookies go flat. It's expensive but I'm going to start using it if the cookies turn out yummy.

@Flatbush I would not use olive oil in baking, as the flavor of the olive oil with alter the flavor of whatever it is you are baking. It's best to use a flavorless oil

To those saying olive oil has a strong taste.... that is false. Light or extra light olive oil is mild and has no strong taste.
I use four different types of olive oil and always use the light versions to bake with.
