I have a question regarding shipping cannolis to Florida.  Is it possible to ship without them arriving soggy, etc?  I would really like to send some to my sister as she has told me there are no good Italian bakeries in her area.  Any information or suggestions you can provide would be really appreciated.

Sometimes I put a leftover one in the fridge and the shell gets soft.  I wonder if you could send the shell and filling separately. Then she could fill them when they arrive?

A few years ago a co-worker offered a tray of canolis at a holiday buffet.  They were delicious.   I got the name of the company where they were made.  She mail-ordered the kit (shells and filling) from La Rosa's Pastry Shop and Bakery in Shrewsbury, New Jersey.  From what I could see and taste, they remained fresh during shipping.

@deepwaterdotter  I know where that is. I have never had the cannolis though.

The cannoli shells will definitely will be soggy and depending on the weather & days to ship the filling can go bad because it needs to be refrigerated.  They really only are good for the day they are filled.

 

My suggestions:

Instead you can purchase & ship the shells from your house or look online...even on Amazon and both large & small are available.  Or she can purchase them if she can find the shells in her area.  Can sometimes be found in Italian grocery stores commercially prepackaged.  Only thing is if you ship them they are delicate and can break easily. 

 

The filling is very easy and is only ricotta, which can be found in any major grocery store and confectioners sugar and maybe a couple other ingredients depending on what you want in your filling.  Many recipes are online.  She can make them fresh herself in a matter of minutes since no cooking is involved.  Only requires beating the ricotta until smooth, adding ingredients, and filling shells!  Nothing better than fresh filled cannolis!  Yummy!

 

Also, one of my local grocery chains even sells premade cannoli filling so if we don't want to make it ourselves we use that.  I like to purchase that and use as a dip with cannoli pieces!

No, you should not ship filled cannolis.  But you can order cannoli kits, where the shells and the filling are separate.  You pipe the filling in the shells when you want to serve them.  Veniero's in NYC has a good selection of kits; I have sent them as presents in the past.

From what are cannoli shells made?  I've never eaten a cannoli and would like to try them.  They are rare to non-existant in my part of the country.

@Kachina624 @Bookplate @Scorpio1971  @Zhills  @proudlyfromNJ  - Thanks for all your comments.  I think I will try the kit mentioned in your responses.  That would make sense -- the shells will remain crisp and the filling is probably shipped partly frozen.  Someone asked where she lives in Florida and it is near Ft. Myers.  I don't know what cannoli shells are made of, I just eat them!  Thanks again, all, and happy Thanksgiving.

With all the Western New York snowbirds in the Fort Myers area, there are bound to be good cannoli!  I googled “where can you buy cannoli in Ft MyerS” and several Italian bakeries & delis came up.
