Breakfast for Dinner Question

My girlfriend & husband are coming over Sat. night for a Breakfast for Dinner meal. Should apps be served and if so, what do you suggest? I'm stumped.

O/T -- Someone posted a recipe for Fruity Pancakes and I just can't find it to respond. These pancakes are baked in muffin tins and as they bake, a crater is suppose to form so you can put fruit in the crater. Figured I'd try them before Saturday just to be sure and they just didn't come out as the recipe stated -- no crater for the fruit filling. Think I'll be making Anne Burrell's Lemon Ricotta Pancakes instead.

You don't necessarily "have" to do an assortment of appetizers, but maybe you could do one special thing, like Rick Bayless' Ceviche Shrimp Cocktail. Serve in parfait type glasses with a little cocktail fork.

Pigs in a blanket or mini pancakes with a bit of fruit on top. Just a few bites, if anything. Breakfast doesn't usually have apps. You could do a spread of fresh fruit with a dip too, since fruit is a breakfast item.

smoked salmon w/ herbed goat cheese (or cream cheese), maybe w/thin slice of red onion, capers & dill on pumpernickel bread?

I construct some version of these on (open-face) slices of pump bread, then cut into triangles for serving ('Can definitely be made ahead!). Here are some photos for you to get some ideas! Have a great time on Saturday! ~ sue Smiley Happy

Thank you all for your suggestions. I'm thinking fruit and/or smoothies will work. Also, I've tried that search box typing in "fruity pancakes" and nothing comes up. Never have luck with that box. Thanks for the link though, I'll try it.

If you aren't watching sugar, you can do something like candied bacon also. It is super easy, and downright addicting. Unless you don't like bacon or brown sugar. And oh how I miss brown sugar. If you make it, please have some for me.
