out for dessert tonight. My son is coming for dinner tonight w/DD and I and do our Christmas together.
I had a box of Pillsbury pie dough in the fridge and a couple cans of pie filling. I didn't even use pie plates. Parchment paper on a large baking sheet, rolled out crust, put on parchment, canned filling in the middle spread it out some, folded up the dough and baked. 1cherry, 1 apple and I have whipped cream. Done.
Only thing easier would be to buy a pie.
My back has been very unhappy since this bitterly cold weather and I just couldn't fuss over dessert. Both kids would say don't worry about dessert at all but I wanted to so something.
Do you ever fudge on making something totally from scratch?

@CrazyKittyLvr2 Yes, indeed, especially in the dessert category. I am very experienced in cooking but even if I had a much longer antiicipated life span I'd still be working on my baking skills. I have had some success but I am certainly not ready to work in a bakery.
I think your idea for desert is inspired. I may steal it from you.
The best thing is to share the precious time with your grown children, and your wonderful felines.
Might I add: May your crazy, off-the-wall net door neighbor not "grace" you with his presence over the winter holiday.

Do I ever fudge on making something totally from scratch? Constantly!
Thanksgiving, I used Stove Top Cornbread stuffing, added some sausage...it was delicious. I used Heinz Roasted Turkey Gravy, and add some giblets, chopped eggs, and a couple tablespoons of turkey drippings So good! This was just for DH & me.
We went to our Sunday School class party a week ago, I took the same dressing "recipe" and got several compliments on it!

@aroc3435 I am actually a good baker but at 72 wit a wonky back I just don't enjoy it anymore.
I've made these flat apple pies before but always made the apple filling using Granny Smiths and the usual sugar, cinnamon and such. This was a 1st with just canned filling.
I haven't seen the neighbor much lately, no idea what is up over there. As long as it stays quiet I'm good.

My family made the decision several years ago to just stop all the cooking on Christmas Day and get together on Christmas Eve for a dinner at our favorite restaurant...later today we will enjoy time together... Merry Christmas Everyone 🎁

@CrazyKittyLvr2 That sounds like a terrific idea. I have gotten into easy the last few years because of my fatigue and mobility issues. My husband always wants pecan pie. I have resorted to Fields pecan pie in the frozen food section. Thaw and eat.
I miss having my homemade pecan pies as well as my coconut cream and chocolate cream. Life tells us when the tank isn't as full as it was 20 or 30 years ago. Father Time and Mother Nature are two opponents that seem to have the upper hand. I don't want to waste my energy fighting either one.

I'm totally into "shortcuts" anymore. In fact, I even bought premade scalloped/au gratin potatoes for tomorrow. Heck, I even bought a juniors cheesecake at WM which I'll top with cherries.
No one cares as long as it tastes good. The older I'm getting my feelings on a lot of things have changed.
Normally, I'd be baking & prep cooking all day for 🎄dinner -- not today I'm relaxing just had to set the table🙂.
Tomorrow it's heat and eat...the perfect way to entertain & enjoy the holiday meal.

I'm trying to picture, folded up the dough like a large turnover or a roll?
I recently bought Pillsbury Crescent rolls with apple pie filling, that'll be easy but would like to try your method too! TIA

@CrazyKittyLvr2 , sounds like the crosata they sell at Wegman's. I only bake twice a year and use Pillsbury pie crusts. In fact, I didn't even bake for tomorrow. My sister picked up a small Junior's cheese cake at Wegman's and a 3 people gave me cookies, so that will be plenty for us. Hope your back feels better. Enjoy time with DS and DD (and Petunia).
