I just got the MCM Eggspress cooker too and it does hard boiled eggs perfectly. I could never get it right boiling them in the saucepan and have zero problems with the cooker.

This problem occurs with very fresh eggs. Eggs that have been in your refrigerator a week or two will peel more easily. Eggs keep at least a month under refrigeration.

That's my take on it too sandy53. The fresher the egg, the more likely not to peel nicely. I have always been told to add some salt to the water when boiling, which I do. I think someone told me once it made the shell easier to remove. I don't know whether that works or not. But I do know that if you've had your eggs for a couple of weeks, they peel much better.
I also learned a little trick from an aunt, who told me that when I buy fresh eggs, I should put a little pencil mark on the older ones to be sure I use them first. It does meme it easier to find the older eggs in the basket! Helps DH keep them straight also.

I read somewhere that a hard to peel egg is one that is too fresh. Leave them in the refrigerator for a couple of days before you boil them.

Mine come out perfect if I cover with water, bring to a boil and let boil 10 minutes. Remove from heat and add cold water...and then pour off all the water. Cover again with cold water and knock each egg to make cracks in the shell. Let sit a few minutes, so the water goes under the shell. They peel easily and turn our perfect! ![]()
So many different ways!

Crack the shell and start peeling at the air pocket under slowly running water. Really helps.

I tried every tip, trick, and different degrees of freshness. Nothing ever worked consistently until I got an egg cooker. I have the Kalorik.
