Tired of the canned beets, but the thought of peeling beets prohibits me from buying them.
I know if you're going to use them in a salad you can quickly heat them up in boiling water then the peel will easily come off - never tried it though. I love hot beets.
Any methods you use?

I roast beets wrapped in foil in the oven after washing them well. The peel just slips off easily once the beets are cooked .

I do the same. I peel it with a paper towel. Comes right off.

How long do you cook them and at what temp?

Have never roasted beets, even though I am on a veg roasting thing now, but I would probably use my potato brush to clean them, toss in oil and stick in the oven

Did exactly that last night for supper! They are wonderful cooked that way. It takes an 1.25 hours to more depending on the size of the beets. I roast anywhere from 375 degrees to 425.

Would it be possible to just pre-cook the beets for a few minutes in foil and still be able to remove the skins? Why I ask is that I'd like to roast some chicken and have beets and carrots roasting with it so all the drippings would become "infused" with all the juices and seasonings.

I use two methods to peel uncooked beets.
The first one is to put the beet (sideways) on a cutting board and I use my knife to take off the two ends. I put the widest cut flat part on the board and use a knife to go around the beet, carving off the peel.
The other one is to (first) put on disposable food gloves (can buy a box of them at the supermarket). Then, I peel it using my potato peeler (just like a potato).

Just want to add, if you ever have to peel uncooked beets, wear disposable gloves, a BIG apron, and peel over newspaper instead of your sink. They stain hands, clothes, and (old) porcelain sinks terribly.
But they sure are delicious!!
