This may seem very elementary but I have decided to make my own broths. I already have done chicken. My question is for beef broth. Why type of meat do you use and is it done like chicken broth with the onion carrot celery etc.?

I like to roast beef bones in oven until there I’d great browning and then make soup as you would with chicken bones.

I use any type of beef bones with a little meat in them.  Ox tails are good as are neck bones and knuckle and shin bones.  Bones with marrow are the best.

 

The longer they are simmered, the better your broth will taste and the better it will be for you.
