Coffee Cake part of Streusel Filled Coffee Cake

1 1/2 c flour

1 T baking powder

1/4 t salt

3/4 c sugar

1/4 c shortening

1 egg

1/2 c milk

1 t vanilla

Mix the flour, baking powder, salt, and sugar in a bowl, cut in the shortening. With a spoon add the egg, milk and vanilla. The batter should be lumpy. Pour 1/2 of the batter in a greased and floured 9 inch pan. Then put 1/2 of the Streusel mixture on top, then the rest of the batter and then the rest of the Streusel mixture. Bake at 25-30 minutes.

 Skillet Pizza Crusts  
   
 3 packages active dry yeast  
   
 1 teaspoon sugar  
   
 3/4 c warm water (105*-115*)  
   
 3 c all purpose flour  
   
 1 teaspoon salt  
   
 1/2 c warm water (105*-115*)  
   
 2 Tablespoons oil  
   
   
 Combine the yeast, sugar, and 3/4 c of warm water in a bowl, let stand for 5  
 minutes.  
   
 Combine the yeast mixture, flour, salt, water and oil, stirring until blended.  
 Turn out on a lightly floured surface and knead for 5 minutes. Place dough in a  
 greased bowl, and grease the top. Cover and let set in a warm place until  
 doubled. Punch down and knead lightly. Divide into 8 pieces. On a lightly  
 floured surface, roll each piece into an 8-in circle. Dry fry each circle in a  
 non-stick pan. over medium heat until the crust are lightly browned on each  
 side. Cool crusts and freeze them.  
   
 When you want a pizza: Preheat the oven to 450* Place the frozen pizza crust on  
 a baking sheet pan. Top with sauce, cheese and meat. Bake until brown and  
 bubbly!!!  
   
 I use a 13 by 18 in baking sheet pan, and can fit 2 crusts on it. The crusts are

I keep these in the freezer for my hubby to make pizza!!! J

Best Ever Cake Frosting

Mix the ingredients below:

2 cups shortening

2 lbs of powdered sugar

1 envelope Dream Whip (use as is in the packet)

Then add:

1 Tablespoon light corn syrup, then add ½ c water very slowly. Add 2 teaspoons of vanilla last.

Dough:

4.5- 5 cups all purpose flour

1 package active dry yeast

1 cup milk heated to 100*

1/3 c margarine or butter

1/3 c sugar

1/2 t salt

3 eggs

Filling

3/4 c packed brown sugar

1/4 c all purpose flour

1 Tablespoon Cinnamon

1/2 c butter or margarine

In the mixing bowl, stir to dissolve the yeast in the heated milk, let it foam and bubble a few minutes. Put on the flat beater, add the margarine, sugar and salt. Add 2 c flour and mix well. Add the eggs, one at a time. Put on the dough hook, add 2 ½ more cups of flour, then add the rest of the flour as needed. Mix the dough on speed #2 for 5-7 minutes until the dough comes from the sides of the bowl. Take the dough out and knead it on a lightly floured surface until smooth.

Place in a greased bowl and grease the top. Cover with plastic and let double in size. Make the filling: Combine the brown sugar, flour and cinnamon. Cut in the margarine till crumbly.

Punch the dough down, roll out on a lightly floured surface. Roll out to a 12 by 17 rectangle. Smear the filling mixture over the dough. Starting with the longer side, roll up like a jelly roll, cut with a piece of thread or dental floss into 12 or 15 pieces. Grease a 9 by 13 inch pan. Place (3 rows of 4 ) or (3 rows of 5) . Let double in the pan. Bake in a 350* Preheated oven for 25-30 minutes until golden brown. Brush with butter after taking them out of the oven. After they cool, you can put an icing on them, but I like them just as they are!!! JJ

Fudge For One


1/3 cup sugar
1 heaping tablespoon cocoa
1 tablespoon and 2 teaspoons milk
1 scant tablespoon butter or margarine
1/2 teaspoon vanilla

Mix sugar, cocoa and milk in 1 quart glass measuring cup. Microwave on high 1 minute.
Stir down sides of cup and microwave 40 seconds more. Add butter and vanilla.
Beat until thick and spread on a plate. Let set up and cut into squares.

Sweet Muffins

1 egg

½ c milk

¼ c oil

1 ½ c flour

½ c sugar

2 t baking powder

½ t salt

Preheat oven to 400*

Line a cupcake pan with 12 paper liners.

In a bowl beat the egg, stir in the milk and oil.

Mix in the remaining ingredients, just until the flour is moistened. Batter should be lumpy. For blueberry muffins add ¾ c blueberries at this time. Fill the muffin

cups 2/3 full. Use all the batter in the 12 cups. Bake for 20-25 minutes.

SOS for One

4 oz hamburger meat

1 ½ Tablespoon all purpose flour

salt, pepper and garlic powder to taste

chopped onion to taste

1 cup milk

Kikkoman with the green label – lower sodium. A few drops for color and flavor.

In a saucepan, brown the meat with the chopped onion. Add the spices and the flour. Let it cook a little, then add the milk. Stir and let cook until thick. Add the soy sauce. Serve on a biscuit or on toast. It is also good with a fried egg on top. JJJ

Brenda’s Pecan Pie

1 box of light brown sugar (2 cups packed)

1 stick of margarine, melted

4 eggs

2 Tablespoons water

2 Tablespoons of yellow cornmeal( plain not self-rising)

1 Tablespoon vanilla

1 teaspoon salt

2 cups chopped pecans

2 regular frozen pie shells, unbaked

Mix everything in a bowl and divide between the 2 pie shells. I put the pies on a sheet pan and bake them at 325* for 45 minutes. Let cool.

Blueberry Cobbler

Topping: Mix 1 cup Bisquick

½ cup sugar

sprinkle of cinnamon

1 large egg

Set aside

In a 9 inch square pan, place 4 cups of blueberries sprinkle with ¼ c sugar and ¼ c flour. Crumble on the topping and drizzle with some melted butter and bake at 350* for 35-40 minutes.

My version of Bang Bang Shrimp

Make the sauce:

Mix some Mayonnaise, some Thai Sweet Chili Sauce and some Tuong ot Sriracha to taste.

Peel and de-vein 1 pound of shrimp. Coat with dry cornstarch. Fry in a deep fat fryer until crispy. Drain on some paper towels. Put the shrimp in a bowl and coat with the Bang Bang Sauce. Serve with chopped scallions on top.
