Authentic Shrimp Creole

I have several recipes for this, some say add shrimp at the end, one says simmer shrimp in the sauce for an hour. Which is correct? Doesn't shrimp get tough when its cooked over a few minutes, or is it like meat, the longer you cook it, the more tender it is?
