Wish me luck!
DH says he'll help (if golf tournament gets canc'd due to hurricane).
I'm going to 'wing it' and make a simple recipe without egg (BLECK). And I'm dividing the recipe so I don't make too much all at once.
No pasta making machinery, just a rolling pin.
Haven't decided what the filling is going to be yet, maybe several, but absolutely no meat.
Anyone else make their own?

I have always made my own pasta since my younger years of being in my Italian grand moms basement kitchen. Hours spent canning fresh veggies, tomatoes and hours of making pasta, ravioli and breads.
Every end of summer the boys got to go to Little League World Series and the girls got to "work"....looking back I could never wish for a better life skill.
I make them every holiday when I had family gatherings the only thing I make now is gnocchi because my boys ask me to when I'm up north -- never freeze them always fresh.
just take your time and personally I think the dough is better if its not humid in the house. Good luck and enjoy those raviolis yum!!!

What great memories Homedecor! My Italian grandmother didn't have a basement-HA and I don't think she made her own pasta.
But she did make the dough for homemade perogies (spelling?) which was like a pasta dough. My great grandfather (her FIL) lived with them and was Polish. Boy were they delish!!

I make my own. I do use a pasta machine to roll out the dough. Then I lay the dough flat and put spoon fulls of cheese mixture on it spaced about 2 inches apart.
I place another flat piece of dough on top and cut out the ravioli with the rim of a drinking glass. I press the edges closed with the tines of a fork.
I use the left over pieces of dough to make spaghetti or some other pasts shape.
My grandmother and mother used to make ravioli this way. I once tried one of those ravioli trays, but it was way too messy.

I make kreplachs, a kind of jewish ravioli, I use my food processor for the dough, and an attachment on my kitchenaid mixer to roll out the dough, easy and great.

I just recently purchased the pasta attachments for my KitchenAid mixer and am having fun making my pasta from scratch. I made it years ago just with the rolling pin and on the kitchen counter. That also worked. I like a cheese or sausage filling. Remember not to overstuff them. I know they always say to use a melon scoup or something like that but I always just used a heaping teaspoon. There are few better foods on the planet than home made raviolis.
Remember, the humidity from all the rain will play a part in your dough.

I just use egg roll wrappers or won ton skins......used to make it my own with the old Ron Popeil Pasta maker and they were delist, but this is so easy!

My gosh, brings back memories.......home made raviolis. 'Me and my mom' when I was a child. Also, our local grocery store had fresh pre-made raviolis, which we boiled and added to homemade ground meat tomato sauce. Boy, I can smell the aroma right now!
