Arborio Rice: secrets for cooking

Help! I've gotten salads with arborio rice & it's so nice & fluffy, so decided to make some on my own. Instead of fluffy...it turned into a texture of baby food!! I followed directions..stirring continuously & adding water a cup @ a time.

What's the secret of fluffy arborio rice?

Are you sure it's arborio rice? This is the rice used to make risotto which is meant to have a creamy texture, not fluffy.

You beat me to it karlam... I cook risotto a lot and arborio rice is meant to be creamy and a bit loose...the way you want risotto to be.

To make a fluffy rice you want a lower starch rice like a long grain....rinsed very well before cooking.

Kariam is correct, it's not meant to be fluffy.

It's difficult to make arborio fluffy because it's a high starch short-grain rice that results in a creamy or sticky outcome.

For fluffy rice, I would choose a long grain rice -- for example basmati, tex-mex or long grain white rice.

Cool! Thanks, ladies! I was just thinking it was going to be fluffy, but nothing wrong w/ a creamy rice...with peas...and corn...and chives. Yum!!

I made a yellow rice with saffron using Arborio rice. I use chicken broth instead of water. You should heat the liquid & add it 1 cup at a time. Hope this helps.
