@Effie54  Are you cooking just the apples or the whole pie mixture BEFORE baking if using Cortlands?

Never, have been baking them over 60 years.  Control the hardness/softness by the type of apple you use.

@Mersha  I cook the whole pie mix before baking when using any apple other than McIntosh.

Nope.  That takes the Easy out of "Easy as Pie,"

I agree control the softness with the type of apples you use. and the thickness of the slices you cut. 

I make a pie or two when the Cortlands come out.  They are usually Bigger apples and hold their shape fairly well.

I use a few Macintosh in there too.They turn to mush in between the Cortlands.  ( Macs are great for apple sauce )

Back when I used to bake apple pies, I never pre cooked the filling.

I've never made an apple pie. I don't have a clue.

I have only made pecan pie or chocolate pie.

I rather eat a cookie or some chocolate.

DH bought a homemade apple pie at the barn last weekend. He ate the whole thing.

I cannot answer your question ( sorry) because I think that is one of the most challenging things I ever tried to bake and I do A LOT  of baking. Good luck tho.
