Got info from NYTimes.com about a quick way to roast turkey. It's supposedly an old fashioned way of preparing birds for roasting.
You basically have to flatten the whole turkey. You have to remove the backbone, flatten the breast and dislocate the thigh joints from their sockets. Then you roast it, and it is supposed to result in " a lovely roasted bird with a not-overcooked breast and perfectly done legs; it also cooks in about an hour — yes, you read that right: an hour. The downside, apart from the butchering, is that some might consider it weird-looking."
They say the turkey that cooks in an hour is a 6 - 8 pound turkey....didn't know they came that small!
Even though I'm not cooking one this year, I might try it at another time.
