My Father used to make them(In New Jersey!). He very lightly breaded them, put them on a broiler pan and put in the oven. When they were almost soft enough, he would give them a quick run under the broiler on each side to crisp and brown.

Deep frying is out for me.  That's a big no no.  Deep frying is worse then just a little bit of grease in a pan. It's smothered in grease.
