Re: Antonella Nester's Banana cake recipe

Banana Cake

1/2 cup butter-flavored shortening
1-1/2 cup sugar
1/2 tsp. salt
4 smashed brown bananas (the riper, the better)
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
2 eggs
1 Tbsp. vanilla
3/4 cup milk

All mixing must be done by hand with a wooden spoon. Mix all the dry ingredients except flour. Add the eggs, sugar, shortening, vanilla, and milk. Mix thoroughly. Add the smashed bananas and mix. Add the flour, continuing to mix. Grease and flour a 9" x 11" pan. Pour in the batter and bake at 375°F for 25 minutes or until a knife through the center of the cake comes out dry. Cover with powdered sugar, let cool, and cover again with powdered sugar.

Re: Antonella Nester's Banana cake recipe

I'm pretty much known as an incompetent baker, so the fact this cake comes out fabulous for me is saying quite a bit.  One change I do make is I use my trusty old Kitchen Aid, I would kill myself using a spoon to mix all this up.  I actually tried it once and soon gave up.
