We love ambrosia in my house and eat it a few times in the warmer months. My recipe is slightly different than those posted.
1 8 oz. pkg. cream cheese, softened
1 12 oz. tub cool whip, thawed
1 15 oz. can fruit cocktail, drained
1 20 oz. can crushed pineapple, drained
1 11 oz. can mandarin oranges, drained
1 cup shredded, sweetened coconut
Blend cream cheese and cool whip until well mixed. Add remaining ingredients. Mix well. Refrigerate for several hours and serve cold.
Obviously, this makes a large amount. I usually make it for family gatherings.

My aunt brought this recipe for Easter brunch. She used various fresh fruits, but the dressing and coconut were always the same:
5 tbsp powdered sugar
1 cup heavy cream
1/2 cup sour cream
1/2 tsp vanilla
1 1/2 cups toasted sweetened coconut
Toss fruit with 2 tbsp sugar and let drain in colander for 1/2 hour.
Whisk cream, sour cream, 3 tbsp sugar, and vanilla in bowl using electric mixer on low until foamy. Then whip on high to form stiff peaks.
Fold in fruit and coconut.

Yes, my mom made it frequently when I was growing up. Now that mom has passed, my sister is the one that makes it. Always have it on Thanksgiving and Christmas as a dessert. Yummy

@SouthernBee wrote:@SharkE : My Mom used only oranges, coconut and some sugar. She would peel the orange and remove the white stuff ( can't remember the correct name - now)and section the orange and cut in smaller pieces. She would squeeze all the juice out. Then add coconut. If the oranges were really sweet and juicy - no sugar added. Her original recipe included a small can of crushed pineapple drained and adding chopped pecans but we preferred just the orange and coconut.
@SouthernBee That's it! ![]()

Try it with Amaretto. To die for!

Some version of it was always served at Stanley Home Products parties in the 60's, and I think Mom made every version for us. My brother and I preferred jello salads to ambrosia.

No sour cream for me ! Cool whip or dream whip.

I have never tasted it, but have seen it served at picnics. It never appealed to me.
Thankfully, my mother never ruined a good fruit salad with marshmallow and sour cream.

Not a fan--hate the marshmallows in it--they always get mushy .
