I'm kind of on a Salad Kick...This one is different and really good!

1/2 lb Bacon cut in 1/2" pieces

3 cups diced cooked sweet potatoes

2 cups pineapple chunks

1/2 cup mayonnaise

1 Tablespoon Dijon Mustard

2 Tablespoons lime juice

1/2 teaspoon fresh ground pepper

1/2 Cup chopped Macadamia nuts

Fry bacon till crisp- drain on paper towels. Combine bacon, sweet potatoes, and pineapple in large bowl, toss lightly.Combine the rest of the ingredients for dressing - mix together- refrigerate -Just before serving top with macademia nuts..

That sounds delicious. I love sweet potatoes, and bacon.

I should add- its good with chopped pecans instead of macadamias (kind of loses the "aloha" factor though!)

I frequently add sliced green onions too, both for color and flavor...

I think roasted pine nuts would be good as well. I always have those.

This sounds so very good. I love sweet potatoes more savory. Usually I like them with grilled onions and peppers and some sweet baby Ray's bbq sauce on top.I sure will try this.

So do you dice the potatoes before cooking and how small?

debc, I like them about the same size (or a little smaller) as the pineapple chunks- sort of an aesthetic thing with me..

Well I got everything for it, even macadamia nuts. I went ahead and got pineapple tidbits tho as I will dice the potatoes in my kitchen aid dicer and be smaller.
