Help! The instructions under "Do I need to alter the recipe for a 6-qt electric pressure cooker?" says: "Yes, instead of relying on the cooker's biult-in timer to keep track of the pressurized cooking time, use your own timer and start the countdown as soon as the pot comes to pressure."

I have an old Cook's Essential pressure cooker with the red button that pops up. Is that when I do the countdown? (I find that, in general, it takes about 5 more minutes before the timer starts to count down from when the red button first pops up.)
