Thanks for all the suggestions. Next time I'll add the refried beans onto the chips first, flatter chips next time. I like the idea of Emeril's recipe for taco meat. I will definitely make it -- it should help grab and hold the other ingredients. I'll add Jack cheese to the cheddar, I think it is a little creamier which would help, too. Shredded pork is a great idea, too.
