Canary is a clear bright yellow and lemon has a green undertone.

Limon quartz is a real gemstone, while canary crystal is man made. Limon quartz can have a slight green undertone, but it is definitely yellow. Some limon stones are a softer yellow, while others can be a more vibrant shade - sort of like you'd get variation in amethyst colors which are also a type of quartz. If you want sparkle, then I think the crystal may be a bit more sparkly. But a nice clean quartz stone is sparkly too.
