Why 18kt plating?

I was wondering why so much of the plating done on sterling silver is 18kt. I have many 14kt pieces and buy very little solid gold anymore because of the price. I don't like the brassy look of 18kt and was wondering if there's a specific reason for the 18kt plating. Just curious.
