I live in my camper for 5 months thru the summer so this is not just about vacation for me - it is about my entire summer.

I like the suggestion of sleeping on a zippered mattress pad. I'd just put an unfitted sheet on top of that and not worry too much about how it looked. The mention of a washer/dryer in a camper was interesting. I'd give up extra storage space for a stackable pair (even if you could only do small loads, it would beat going to a laundry mat).

Mu DH found someone online that makes custom sized sheets but they are uber expensive and only 200 thread count which I think would not be very soft.

We have 2 campers, one that we use for towing and one that's permananently placed on a site by a lake.
The first camper has the bed up against the wall on one side and about 20 inches between the foot of the bed and the wall on the bottom. It's very difficult to make. I sometimes use camper sheets on this bed. They have a fitted bottom sheet and the top sheet is fitted on the bottom only. They are not so wide that you have to tuck the top sheet in on the sides. I have also found sheets called Sleep-Tite. These sheets are smocked on the bottom sheet at both ends and NEVER come off of the bed while sleeping. They can be purchased at Amazon or Brylane Home.
The second camper has a walk around bed, but the mattress is stuck tight between 2 built in night tables at the head of the bed. (sounds like your situation) I use the Sleep-Tite sheets on this bed. The mattress is a Sleep Number and when it is time to change the sheets, I deflate the mattress a little to make it easier to get the fitted sheet on without removing the mattress.
I still hate to change the sheets as it takes much longer than my regular bed at home, but once my sheets are on, they stay on. I no longer fight with them every morning when I just want to make the bed. I recommend Sleep-Tite sheets. Please check them out, you will love them too.
I have a friend who has a bed sheet system for her bed. It's called Travasak.(there are also other brands on the market) She swears by it. It's a comforter that has a zip in sheet. One side of the comforter is used for winter, the other side for summer. It only takes her minutes to make her bed and change the sheets. I would buy one too, but it's too expensive for me. If I was a full timer, I would consider buying one. They are about $300 to $350 for a king size bed.
Added: If you can use the color blue, ShopHQ has King size only for less than $40 on clearence. Wow, what a deal!

If you go to walmart, look in the sheet section. They have what I call "sheet garters". They look like garters that were used to hold stockings up. They are elastic and have metal clips on each end. They come in a package of 4. You clip one side to the right top of the elastic on the flat sheet, then clip diagonally to the right side of the sheet.
If you go on the walmart site, type in sheet straps. I found mine in the store.
I not only used these in our camper, I use them on our regular at home mattress. For whatever reason, I can't get sheets to stay in place. This isn't perfect, but its better than nothing.

Oh how I wish we had a camper/RV. DH doesn't want to drive one of those things and doesn't want to hook up a trailer on the back of his truck...sigh.
Hopefully over the next couple of years we'd like to go up to Alaska and it would be nice to go that way. Oh well.
