@LonestarBabs I just saw that on House Hunters the other week, a couple did not want an Island in their kitchen, and the realtor was so shocked....I can see why though, because in some cases it almost seems in the way, depending on how it is laid out.....
If you are truly looking for that open feel and open space, I can see how an Island would not work for you!

@CANDLEQUEEN I also don't like the microwave over the stove & I take that out! In my last house, I took out the builder microwave over the gas cooktop. Didn't use a microwave so didn't miss it. I preferred the headroom to look into tall stockpots or just to see what I was cooking without clunking my head on a stupid microwave. I install a custom backsplash and use a professional grade range hood w/lighting.
When I sold my last house, the buyers -- who in turn put the property up for lease -- wanted me to install a microwave over the cooktop. I said that was something they could do, as they were buying the house with the appliances in place and the offer was not contingent upon adding a microwave. My realtor freaked that I would lose the sale. I had 18 offers so I wasn't worried. But I got the biggest, clunkiest, cheapest one I could find and made my realtor pay for it.
Yep, open space in the kitchen (which is NOT a whole house open floor plan) to move around is my preference.

ITA about kitchen islands. I also don't like a permanent island... I also have a butcher block-topped cart I move to my work area and move it back when I need extra counter space.
I have an open concept and not having an island is great, then I have plenty of room for my guests at my dining table... warm and cozy in my kitchen......
