Stainless Steel Pots and Pans and burning issues...not the food but pan

I'm not sure where to post this so I'll try here and on the Kitchen forum, so here goes:

I have been using WP Pots and Pans for 15+ years. They are his original Bistro line so they can not be used on induction cooktops. My family will be taking a trip this winter and having the ability to cook in out hotel room will be a great benefit (diabetic issues). I purchased the NUwave induction cooktop last month so I needed to purchase a few induction ready pots and pans. I choose a 3 from TJMAxx the brand name is David Burke, stainless steel inside and out (I prefer stainless to nonstick interiors) with red silicone handles. The issue I am having, which by the way I do NOT have with my WP cookware, is that when I attempt to sear (brown) meats the pan begins to brown and burn yet the meat isn't browned. I hope that I am explaining this properly. I do not cook using high heat and I know very well how to cook using stainless steel cookware. Does anyone know what is causing this issue and/or how to fix it. TIA

Re: Stainless Steel Pots and Pans and burning issues...not the food but pan

I have no idea, but I'll throw out a few thoughts that I had when I read your post. First, I'd probably just return the pans if you can. My second thought was that maybe there was some sort of protective coating that needed to be cleaned off, although I'm very sure you washed them. Another thought that came to mind was that sometimes cookware needs to be prepped or primed in the oven, before use. I've actually had that situation in the past, but don't remember if it was stainless cookware. Were there any instructions with the pans?

I have a few pieces of older stainless cookware, that I purchased from HSN years ago. I have to cook on the lowest heat setting with them, because they rapidly conduct the heat. If I set the heat too high, they will burn.

I did do an online search and, while I could find articles about David Burke stainless cookware from several years ago, I actually couldn't find any available for sale, or any reviews. Maybe the line was defective and TJ Maxx got what was left over in stock.

"I've been here since October 2006. Wow!"

Re: Stainless Steel Pots and Pans and burning issues...not the food but pan

I also can't find this cookware online anywhere...not even on ebay, strange. I have cleaned then with both soap and water and also with cameo powder stainless steel cleaner. It is the same powder I use on my WP. There was a hang tag attached to them when I purchased them but it didn't mention anything more than what other stainless pots require. They really are pretty and lighter in weight than my WP but I may have to return them and just bite the bullet a buy the newer WP Bistro pots and pans called Bistro Elite and they are induction ready. I was trying to save a little money but I guess as the saying goes "you get what you pay for". Thanks for your thoughts

This highlights exactly why I shop at QVC and other online sites. The reviews. If the WP rate highly, I'd return what you have and buy those. And do check on your hotel/motel cooking arrangements when you book. Some fire codes strictly prohibit it. I've lived in motels for months on end for DH's job. You can tell by the smells, both good and bad, which places allow cooking.
