Refinancing a home - paperwork

Will someone tell me what is so flippin' important about a copy of a utility bill? We have given them every other scrap of paper under the sun and we get a call. They need a copy of a utility bill. We get ours online, so I hope it prints with our address - another requirement. If this wouldn't save us so much money....it's just frustrating!!!!!!!!!!!!!!!!!!!
