@ Oznell If you subscribe to Acorn there is a four episode series called Inside the Ritz Hotel that shows everyday life with staff and guests, Christmas tea basically everything about the London hotel. It’s really lovely.

@nrm ,   neat, I wish that we got Acorn.  But it sounds SO interesting-- at least the people on here who do get Acorn now know about it, thanks so much for the alert!

      This is not traditional clotted cream, which is made by leaving cream in a warm oven overnight and straining it.

Since I don't have access to real Devonshire cream, I make this recipe that I found for "clotted cream". It is so easy. It is sweet and rich, perfect on scones.

 

There are only three ingredients:  * 1/2 cup cold heavy cream

                                                         or whipping cream

 

                                                       * 1 Tablespoon powdered

                                                          sugar

 

                                                        * 8 oz. room temperature

                                                           Mascapone cheese

 

  Whip cream to soft peaks and add in 1 Tbls. powdered sugar.

Add Mascapone cheese and beat until fluffy. Don't overbeat.

 

 Cover and refrigerate. May be kept for up to a week. Set at room temperature for a short time just before serving.

 

  You don't need to have  a tea party. You can have  "Cream Tea" with just scones and tea. Or, have with coffee if you prefer.

 

  We have Strawberry or Black Cherry preserves or Lemon Curd on our scones and then top it with the faux "Clotted

Cream". Delicious!

                  You are welcome.

                Yes, it is a little thicker and richer than whipped cream.

               Mascapone cheese is similar to cream cheese and is

               used in a lot of Italian desserts.
