Always wash them first. I want them to be "my" clean when I put them on the bed & sleep on them. They smell like being packaged up when you take them out of the packaging. Not fresh. If I'm lucky, it will be a warm breezy day & they'll end up on the clothesline to get Mother Nature drying & a fresh smell (sometimes I do that with just my pillowcases).

Most of ya'll spend a lot more time washing (everything) than I do.  No to new sheets, and no to new clothes.  And i have never opened a set of new sheets and been repelled by the smell.  In fact i love the way a new set smells and feels.

If you buy sheets new, wrapped in plastic, do you just put them on your bed, or do you wash them first?

I do.  It's important to rid the item of "off gassing" and residual processing chemicals.
