Great idea about using a dimmer in the bathroom.

Lighting can be very expensive... but you can find nice fixtures at more affordable prices... it takes a lot of work and some luck! Yes, you'll need more lights for a larger mirror, but I like a lot of light in the bathroom. I want to be able to see colors, make-up, etc. I think a larger mirror will help magnify the lighting as well (but I could be wrong about that!).

We just did a remodel of our master bathroom and we have wood framed mirrors that match the vanity above each sink and we did LED can lights in the entire bathroom and they work beautifully. If I were doing lights over the sinks I would do the two light one with a brushed nickel finish.

Which ever fixture you choose, make sure it takes cool LED light bulbs. My sister's had regular lights in it when they moved in, and boy does it get SUPER hot in there while getting ready in the mornings. I do like the two silver ones. I like having a large mirror so I can see all of my outfit and a nice full view of everything. With separate mirrors, you would be limiting the range of your view. I do know they make mirrors that are tilted down for people in a chair to be able to see the same perspective as if they are standing up. If you do a mirror that can be tilted and locked, one can be a plan flat mirror angle and the other one can be tilted for you to sit at the vanity to do your makeup and hair. The one large mirror would also allow you to see everything since it would cover from the backsplash up, so you wouldn't be left out by sitting to do your makeup.
Just remember that you need good lighting in the bathroom to be able to put on makeup, do your hair, and see what colors everything actually is.

I have a really good makeup mirror. Because of my disability not even sure whichever mirror I do I will use.
I was thinking also if I did two mirrored I could do sconces. One on each side and one in the middle of the two mirrors.

Here is a image of a vanity with two mirrors and one with one. Keep in mind this is just a photo off the Internet and is not the same color as mine. Next week I should have the sketch of mine from the cabinet people.

My two cents:
I like the two mirrors and also that rectangular 2 light sconce you have posted in the picture with the two mirrors...wood trim to match the vanity would be nice.
i don't care for the one big mirror look at all. The trim on the mirror you posted is too small in scale for the size of the vanity. If I went with one big mirror, I'd look for one with a beefy frame.
the mirror trim is more balanced on the two smaller mirrors.
I prefer mirrors frames not to be elaborate. it's too difficult to clean them with all of the dust, hair spray, air freshener and the like that always finds the nooks and crannies.

I am leaning towards two mirrors. That picture of the vanity with the mirrors is not what I am getting. It was just a picture I found with a vanity so I could get a idea of what one or two mirrors will look like. So I am leaning towards two mirrors. Two 2 light vanity lights and a mirror same color wood as vanity. That is what I was leaning towards. I think you guys just confirmed what I was thinking.
