Post a NEW or FAVORITE holiday COOKIE RECIPE

With the holidays approaching quickly, I thought it might be a good time to start a cookie recipe thread for all to share and enjoy.  Please feel free to post pictures as well.  Here's a new recipe that combines all the things I love in a cookie..

CRANBERRY WHITE CHOCOLATE SHORTBREAD DROPS

(Melt in your mouth shortbread mounds with cranberries and white chocolate… simply divine!)

 

 

  • 2 sticks butter, softened
  • 1/2 cup sugar
  • 1 egg yolk
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup dried cranberries
  • 1 cup white chocolate chips
  • 1/2 cup chopped walnuts

 

 

 

  • Preheat oven to 400 degrees F. Coat 2 baking sheets with cooking spray.
  • In a large bowl, cream butter and sugar. Beat in egg yolk, vanilla, and salt. Add flour; mix well. Stir in dried cranberries, white chocolate chips, and walnuts. Drop by small teaspoonfuls onto baking sheets.
  • Bake 10 to 12 minutes, or until lightly browned on bottom.

MERINGUE COOKIES

 

 

 

INGREDIENTS:

 

  • 3 large egg whites
  • 1-1/2 teaspoons clear or regular vanilla extract
  • 1/4 teaspoon cream of tartar
  • Dash salt
  • 2/3 cup sugar
  • 1/2 c mini semi-sweet chocolate chips

DIRECTIONS:

  1. Place egg whites in a small bowl; let stand at room temperature 30 minutes.
  2. Preheat oven to 250°. Add vanilla, cream of tartar and salt to egg whites; beat on medium speed until foamy. Gradually add sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until stiff glossy peaks form, about 7 minutes. Fold in chocolate chips gently.
  3. *Cut a small hole in the tip of a pastry bag or in a corner of a food-safe plastic bag; insert a #32 star tip. Transfer meringue to bag. Pipe 1-1/4-in.-diameter cookies 2 in. apart onto parchment paper-lined baking sheets.
  4. I do not use a pastry tip... drop by tablespoonfuls onto parchment to bake.
  5. Bake 40-45 minutes or until firm to the touch. Turn off oven (do not open oven door); leave meringues in oven 1 hour. Remove from oven; cool completely on baking sheets. Remove meringues from paper; store in an airtight container at room temperature.Yield: about 5 dozen.

I'm thinking that @ciao_bella's cookies could be made to be gluten-free... and they look so good.

@Snicks1  since the meringue cookies are mostly egg-white, they could be made peanut-free by using that particular type of chocolate.  Or without any chocolate... they are also good.
