I always make David Venable's Mexican Taco Bake on Cinco De Mayo. I enjoy being festive on this date and due to the nature of the Virus I will not be able to get all the ingredients this year.  As many of us have been quarentined we must make the best of a bad situation.  what are people doing for Cinco De Mayo this year ?

5-5 is a big birthday (65) for my hubby so we will be ordering sushi. We have been deprived our local sushi place was closed for 6 weeks

I have never really celebrated it. But my husband and I like enchilladas and one of the best recipes I have found is from the Pioneer Woman's first cookbook.

We don't really "celebrate" Cinco de Mayo, but my husband has been talking about it like we have been celebrating it all our lives.  I guess he's getting desperate.  LOL

 

Either way, he's asking for tacos tonight.  I make tacos on a somewhat regular basis anyway, but he really wants them TONIGHT.  I guess that's what we'll be eating then.  I really don't know what else to do.
