what's the best time to water in this hot,hot weather?

I planted some beautiful larkspur and black-eyed susans a week ago. the weather here has been so hot lately, between 98-101 every day for the last week or so. I watered them really well when I planted them and then every evening just before sundown for a few days, then every other evening. some of the black-eyed susans just dropped dead after three days. the larkspur and the other susans are looking great. did I over or under water? did I water at the wrong time of day? what do you experienced gardeners recommend for watering in extreme heat?
