Allegheny, ok. Now, you may be on to something here. My husband put a tablet of tums in with each plant when he planted these. And I think he has been doing this for the past few years. That may have something to do with it. I know when we first planted them he did put a lot of organic compost and tilled it in before planting. This is when they were so good and mild. That may be a contributing factor also, now that you mention it, so thanks so much.

I think that hellopenas--:-).... mellow out when you cook them. I stuffed them with the usual things and roasted them in the oven and even my whimpy hubby scarfed them down. Had some green ones and red ones but again I think the red ones are more mellow too.

@violann I cut pepper in half and remove seeds (I like spicy so I leave membrane) fill with cream cheese and wrap with partially cooked bacon. Bake at 375 for 15-20 minutes till bacon is as crisp as You'd like

 

sometimes I make with proccutto instead of bacon

YUM! Couldn't figure out how to keep the cream cheese from melting before the bacon got crisp. THANKS for posting- these sound WONDERFUL for the holiday season.
