so we built container gardens this year. One of the vegs we put in was beets, from seed.  

Thinning out the row (way overseeded) and dh asks if they are edible.  

i said let me see, as i put in my mouth. 

delicious!!  checked to see, and yes,, the greens can be eaten raw, or cooked. 

made a nice salad with them last night.  going to go thin the rest of the row tonite.  kinda a cross between spinich, and leaf lettece.

I loved beet greens throughout my growing up years from my parents' garden; thin the rows, cook the greens with the tiny baby beets, yum.  Delicious as salad greens too, and they pack a wallop for nutrients as well.

Aren't they wonderful in salads?  Not that common in some stores.

 

Due to a complete lack of imagination, I put them in beet soup just like putting pumpkin leaves in pumpkin soup.

@kittyloo  They are coveted in our house. I saute them gently with a squirt of lemon and some minced garlic. My neighbor keeps asking me to make him some, but my DH eats them right up before I can save them! BTW, you can use the mature leaves as well.

@kittyloo   I buy Spring Mix greens for salads, and beet greens are in the mix.

I love beets, but I never ate the greens.   I'm big on salads made with spinach,  or arugula, so I'll be sure to try beet greens...thanks for info!
