As far as the pies, because of the nature of the berry , there are many seeds. Some people do not like seeds . I don't mind the seeds nor do my family. The berries could be trained through cheese cloth but you loose the pulp of the berry .
I usually mix abt 7 cups of berries with 1 cup of tapioca, 1 1/2 cups raw turbino sugar , Allspice 1 tbs and abt 1 cup water . Mix well .Let it sit in bowl at room temperature for abt 20 mins while preheating the oven . The water and letting it sit , in my opinon helps the tapioca soften . It's a great thickner and adds a flavor . I don't like my pie too sweet as I like to taste the berries .
