Transpiration is the evaporation of water from the leaf surface; it is also the way that plants cool themselves. Leaves will show signs of wilt. About 90% of the water that enters a plant's roots is used for cooling under these warm dry conditions.
This is also why you should apply mulch around your plants so that any water already in the soil doesn't evaporate. The mulch keeps the soil temperatures not as high as the air temperature above, thus keeping the roots cooler.
