I will do some gardening this year as a newbie , I would like to grow some vegetables and herbs, so which one is easy to grow and will bear fruit all year long >? I live in the South by the way . thank you

Zucchini and pumpkins are easy, tomatoes too. Vegetables need a very sunny spot, lots of sun most of the day. If not, you won't get the fruit you want. Pumpkins and zucchini take up a lot of space, so be prepared.
Cannot think of vegetables which produce all year.

Define the south. I live in the south, its 25 here at night !
Look into containor gardening !
No mud, no weeds,.
Get a big bucket, 15 gallon.
1 part soil
1 part ground back chips
1 part steer manure
Stick in tomato
Stick in tomato gage !
You can also do blueberries !
If you can grow azaleas, same soil mix !

There are two varieties of vegetables-- cool season & hot season. Examples:
Cool season:
lettuces
broccoli
peas
Hot or Warm season:
tomatoes
eggplant
peppers
pumpkins
squash
melons
Herbs are either annuals like basil or perennial like rosemary. Google 'annual herbs' or 'perennial herbs' for others.
The most important thing is at least 6 hours of sun daily. Make sure the soil is loose and not packed down, add compost to give your veggies a boost twice during the growing season. Certain vegetables may need more compost like peppers & pumpkins.
Make sure your veggies get at least an inch of water per week, more during hot weather. Put a rain gauge in your garden to tally rainfall & watering with a hose.
There really are no vegetables that give veggies year round.
ETA: if you want to grow mint-- put it into a container as it can get out of hand in a veggie garden.
If growing strawberries, make sure that garden area is contained as they spread by underground runners or stems.
