Which pre-installed apps should I disable/delete? There are so many on there, not being very tech savvy, and I don't have a clue. Any help is appreciated, TIA

I would not remove or disable any apps on your new phone, because some of the apps are running background tasks.
I have a Galaxy Note 5 with 32GB of storage, running Android 7. My phone has 95 apps installed and runs just fine. It has an older OS and I need a replacement soon.
If you need more storage, find an SD card. Amazon sometimes will have them on sale. You can use Google tools to store a copy of your photos and data.

Usually you CAN'T remove the pre-loaded apps, at least without rooting your phone which will void the warranty.

I would go to your carrier's store and discuss it with them so you can fully understand. You'll do much better and smarter!
