I have not updated to OS 15 yet. I've seen the new APP LIBRARY feature and I prefer the old system for organizing my apps.
Do you have to use the App Library system or can I just keep my apps set up the way they are. I currently put a few apps in one square on my screen and give the set of apps a title I devise. For example, I currently have one square file titled Productivity that has all my Microsoft Apps and other word processing apps grouped together in the one screen file.

No, you don't have to use it. It is totally separate and your groupings will still be there. I am using the "recently added" and the "entertainment" groupings, but you don't have to and you can still create your own.

My tablet uploaded IOS25 when I had attached it to my PC and was messing around with photos.
The worst feature so far has been that I am not allowed to adjust the icons on my home screen. Several people with low visision complained about this. I used to be able to choose 15 larger icons and now I have to have 30.

@cindyNC @Hippiified @@I have more than 30 apps and shortcuts on my desktop. Will I be limited to only 30 if I update?

If you are including apps inside of folders, yes you can have more than thirty. And of course you can have more pages of apps. I hope I am understanding the question.
For example.
If you are talking only on first page of the homescreen, I have 24 squares plus 4 widgets.
7 of these squares are folders with many apps inside. 6 are apps in the dock at bottom. There is also a square on the bottom right that is access to APP LIBRARY. Also 3 recently used apps next to that. You don’t have to have the widgets. In settings, I have chosen to use large app icons. HTH
