How to erase personal info on 3 Nextbk 3 and what to replace them with?

We bought 3 Nextbooks 3 & are returning all 3 to HSN. One wouldn't start up & after trying the usb start up suggestion, that worked for a couple of days until this morning. It starts up with the usb connection, but I don't want to have to have a computer around to get the nextbook to start up. We have invested $600.00 in these and reliability is our major concern, so we've decided to return them all rather than worry when they are going to die.

How do we permanently erase our personal info already stored on two of them like email, borders accounts, etc.?

Now we're looking for an ereader to replace these and this is what we want:
larger than 7" screen, touch screen, color, and reliable battery life. What are YOUR suggestions because it sounds like we are looking for a tablet?
