HP Desktop Advice

My desktop computer needs replacement, so I am told. Person who has been "servicing" my electronics is starting to annoy me (taking advance). I am going to strike out on my own and have seen online the new HP desktops, The Envy and The touchscreen. What is confusing me is all the choices. I would tend to overbuy since I always manage to do that.

Anyone have a new HP and have any advice for what I need. My budget is no more that $800 total but less would be nice as well.

1. Fast processor

2. Enough memory for my pictures (photography is my passion)

3. Monitor 17" or more

4. Email, surfing the web

Is the new touchscreen computers and okay idea or should I stick with standard choices.

I am on my own because my "helper" was getting out of hand pricewise.
