I'm thinking that it was probably one of the recent Chrome updates for our Chromebooks, since we both have Chromebooks but they're different makes and models. I use and HP Chromebook and my husband is using an ACER Chromebook but we both have the exact same issue.
One thing that I did figure out is that when there are OS updates for the Chromebook, they're different than the OS updates for the Chrome browser that you have with your Mac or Windows PC, for example.
The Chrome browsers that are independent from the Chromebook are a little bit different.

It would be much easier if things were the same when it comes to technology, wouldn't it?!
I believe you're spot on about this being specific to the Chromebook OS, @Toppers3!😊 I did a few searches for something like "gmail sign out button missing chromebook" and discovered a number of discussions about this very thing. Evidently it was a deliberate change with their new account manager. Here's a thread on the Chromebook support site with a lengthy explanation by the "Product Manager for the Chrome OS account manager" which might be useful:

I keep saying, "Google went stupid".
It suddenly doesn't seem to be able to answer anything. Keeps giving me answers to questions I didn't ask, bringing up what it wants to put in front of my eyes, rather than what I asked for.
Took a while but finally noticed where it says
All Images maps news
...and so on, at the far end it says
Search Tools.
Tap to get a choice between
All Results and Verbatim.
Tap to get verbatim.
Who the heel is going to tap in their question, then keep tapping to get to verbatim?
It's like saying, no Google, i really meant to ask you what i asked, not what you wanted to tell me about.
