I could eat a whole lemon meringue pie by myself, not at one sitting but another favorite.. lemon cake or with coconut, makes my mouth water.. I can smell it..

The only thing that keeps me away from lemon meringue pie is the meringue. I don't care for that. Yeah, lemon and coconut is a very good combination!
There is this bakery in the NE (ME or MA - have to look it up) that makes a TDF coconut cake. I had a birthday about four and a half months ago and a friend sent me this coconut cake. Oh.my.goodness! It is so unbelievably decadent! I have one piece left in the freezer. I slice up several slices, wrapped them in cellophane, froze them, then vacuum sealed them. I'm going to see how long I can make this last piece last. Probably not a lot longer. It's pretty expensive, and I don't have to say how kind a gesture it was to send it to me for my birthday.

Gosh, you evoked memories for me. When I was growing up, so much of my family was in Georgia and we always looked forward to the fresh peaches. My mother was old school, sliced up the peaches and sprinkled sugar and a wee bit of cinnamon on them, and placed them in the refrigerator. As they cooled, the sugar brought out the sweet, syrupy, juice, and we would eat them "as is" or put this lovely, delicious, slightly decadent concoction on top of fresh vanilla ice cream.
My great-grandmother and one of my grandmothers also made mouth-watering, yummy cobblers with the most delicate, buttery pastry. My father also loved making homemade ice cream, and he added fresh peaches and... we were in heaven on earth!

Hey dooBs... I've been "laying low" for a while, not entirely, but for the most part. Had a lot going on in RL and still do, but I thought the boards might be a distraction today, and they are! Food can always distract me!

I just remembered something else... my maternal grandmother made "fried pies." A homemade pastry, filled with either an apple or peach fruit filling she whipped up with spices and sugar, sealed all around the edges, and fried to a light golden brown crisp in a skillet on the stove.
Sweet! Of course, no calories because it all was made with love.

I haven't had coconut cake in years- when I close my eyes I can see my mom gently pressing the coconut into the frosting- she always let us have some leftover in the bag or can... good memories and tasty delicious.
I'd of had your one piece gone in a flash. LOL That was a wonderful gesture your friend sending such a wonderful birthday cake..

I'm glad you did! Nothing evil about peaches... well, other than the wee bit of decadence in some of the recipes.

I also have a cream cheese pecan pie recipe that's really good -- it's not as sweet as regular pecan pie.
