Re: With all this talk of Thanksgiving food...

I used to make pumpking custard in a 9x12 pan and just cut it into squares to serve it

I  had it for breakfast ,it was a balance meal, with all ofthe food groups in it.

I haven't had it since becoming diabetic.  I made mine quite spicy I don't like bland pumpkin.

I haven't tried baking with splenda, or any artificial sweetner

I don't like many of them as they are quite hard to digest and I don't like the way they taste

I just make whatever I feel like, usually eggs and bacon. I rarely eat Thanksgiving leftovers at all. The day of is enough for me. I like cooking it but that's it.

Usually a half sandwich of turkey and mayo, or dressing and gravy, or jello salad, OR all of the above!

I'm thinking of making a big casserole dish of pumpkin pie; no crust, skim evaporated milk, sweetened with Splenda, as a breakfast food.  I get very tired of the same old stuff every morning and I dearly love pumpkin.  What could be more healthy than eggs, milk and pumpkin?

I buy various pumpkin pies during “the season” from Oct through New Years and I never eat the crust. I will enjoy it morning, noon and night.

I used to do the same thing with lemon meringue pie - no crust, no meringue, just a recipe for the filling, cooked on the stove and cooled.

My son offered to make me a Splenda sweetened crustless pumpkin pie. The lemon meringue, though, sounds really delicious!

Happy Thanksgiving, @Moonchilde. I am enjoying your threads here the past few days. Just wanted to thank you!

Thank you, @Trinity11 😍

I don’t think of thread topics very often, but once in a while something strikes me :-)

Whenever I would cook the lemon pie filling, tapioca from the box of pearls, and things like that - well you’re supposed to stick them in the fridge and eat them cold; half the time, I don’t make it - I’ll eat it warm, room temp, I don’t care lol.

I'll be sleeping late so no breakfast just my husbands fabulous coffee when I get up. My husband will no doubt have a half bagel with cream cheese like he usually does. We will have sent all the left overs home with our son.

Re: With all this talk of Thanksgiving food...

I love turkey crouchets, but have trouble keeping them together so I make stove top stuffing add a egg and chopped up turkey real small or in strips and mix together and fry, drain and add gravy on top. Or I take left over mashed potatoes add a egg small egg to a small batch, a small amount of fresh parsly and add shredded turkey and add flour enough to form a patty and dip the patty in a small amount of flour and fry, drain and pour gravy on the patty. My recipe, sooo!! Good!! I don't usually share my recipes, but I have to on these. Enjoy!!!! I use butter flavored shortning to fry.
