DH made meatloaf.  Pinto beans and mac and cheese are going with it. Smiley Happy  Would have done 'tators, but I'd used them all and haven't been back to the store.

What sausage do you use? Andoille or chorizo? I make mine with a link of Andoille cut into slices then quarters of each slice.

Pizza with homemade marinara sauce. ( I did 29 pints on WEdnesday and froze them.  Set for several months.  Did the baked meatballs on Monday and froze them too.

Eggs with onion, garlic, tomatoes and mushrooms, topped with kimchi I fermented myself. Yummy beyond belief!

@JustJazzmom  I used the same sausage as you.  It was fresh, so I removed the casing then 'chopped' it in the pan until I had bite-size pieces.
