Talking about the Easter story on another line made me think of a recipe I've made and which is fun when teaching the story of the empty tomb.

I like cooking for Thanksgiving and Christmas but for some reason, I don't for Easter. They have prime rib, ham, turkey with dozens and dozens of sides, salads and desserts. I am looking forward to this. This is probably the only buffet I actually like. Everything I have tried has been really great.
Noel, I hope you and your family have a wonderful Easter together!!
Sounds good to me! For some reason, I don't get all that excited about cooking for Easter, either. I do it, but I think I'm going through a bit of holiday burn-out by now, lol.
If you were cooking, I know it would be incredible!
Thank you, and I wish the same for you and yours, Irshgirl, a wonderful Easter together!
Yes! I am in a holiday burnout too!
BTW the recipes you have posted look delicious. The couscous salad is one I just saved and will be trying in the near future. I notice that many of the recipes you seem to like really appeal to me also. The empty tomb marshmallow ones look great as well. I have all of these ingredients in the house, I think I will try them tonight since they look so easy. I will let you know how they come out!

Thanks for letting me know
The Empty Tombs are tasty, and nothing to making them, but I really like the idea of symbolic food, so that makes them better.
I look forward to what you have to say about the Israeli salad. I can recommend putting in more greens and asparagus than called for unless that's difficult to digest. I think I put in a little extra lemon juice for the added veg.

All of our Easter decorations are up. They've been up for a couple of weeks. Little Easter Village with bunnies, eggs, chicks, ducks and houses that light up at night. Stuffed bunnies of all kinds that have been collected through the years. My mom loved decorating for special holidays. I do my best to keep her traditions going.
Not sure what the Easter menu is.
Noel7,
Yum on the cupcake peeps.

I just bookmarked the Pina Colada Fluff recipe. I may give it a try for Easter. It looks delicious.

My husband and I are going to the beach for the weekend. We have a favorite ocean front hotel, that we've visited many times, and we have made reservations for Easter dinner there.
I did all of the family holidays for many years. Most of the family is now gone. It's just me, my husband, our daughter and her family. My daughter and SIL usually go to his parents' house for Easter dinner, and I was going to do dessert. But, she called and asked if we would mind if they just skipped Easter this year.
She's expecting our second grand baby in about a month. She's still working and is taking her last class for her Master's degree. And, our SIL works long hours. They just want a weekend to relax, which I totally understand.
I told her we certainly didn't mind, and then I beelined to the computer and made our reservations, lol.
I still enjoy Christmas, but I think that after 56 years, I'm just tired of celebrating every single holiday. They all come around much too quickly. ![]()

I'm not fond of typical Easter fare. We will be going out for a holiday champagne brunch.

6-8 servings
1 8 oz. container of Cool Whip
1 17 oz. can pineapple chunks, well drained
1 17 oz. can mandarin orange slices, well drained
1 large container cottage cheese
1 6 oz. package of orange Jello
Combine all ingredients in a large mixing bowl and stir together thoroughly. Do this very gently so as not to break up fruit. Place in a mold of your choice and let set in the refrigerator several hours before serving, or keep in a bowl and serve that way. For a healthier recipe, use light Cool Whip, fruit in its own juices, low fat cottage cheese, and sugar free Jello.
P.S. I've never found that this works well as a mold, so I just serve it in a pretty bowl.
