It will be a hard day for me. Its my daughters birthday on Easter and I'm going thru a divorce and will not be able to see my kids. I suppose I will be doing nothing.

It's almost a dessert salad, so it can have multiple uses. I love stawberries, but I thought something tart would be nice with the ham. However, the mandarin salad is great when you are short on time. You just throw it all together the night before and refrigerate over night to set.

When my daughter was little, I used to put on big Easter parties with a full dinner. At the time, Pina Coladas were traditional to serve at Easter, which we did. Recently I came across this recipe for Pina Colada Fluff. I haven't tried it, but it looks good and the ingredients seem just right.

Recipe type: Dessert
Serves: 8 servings
Ingredients
  • 1 3.4 oz vanilla instant pudding mix
  • 1 20 oz can crushed pineapple (do not drain!)
  • 1 8 oz container Cool Whip (I used lite) - thawed
  • 1 tsp rum extract (I'm going for real rum)
  • 2 cups miniature marshmallows
  • 1 cup shredded sweetened coconut
  • ½ cup chopped nuts (your favorite)
Instructions
  1. Combine pudding mix and the entire can of crushed pineapple in a large bowl.
  2. Stir until completely combined.
  3. Fold in Cool Whip, rum extract, marshmallows, coconut, and nuts,
  4. Chill until ready to served

IMO, it's perfect! Smile

I also like to have something like that ahead of time, to get in the mood for a holiday... but not heavy. I love side salads.

I just made a new recipe we all loved, Israeli cous cous with asparagus pieces, greens, a little EVOO and lemon juice. Delicious and very Spring.

DH and I will go out to a restaurant for Easter.

$11.95 for appetizer, entrée of our choice, PA Dutch potato filling, 2 veggies of our choice, bread, salad, soup, and dessert. (Soda & other drinks are extra). Otherwise my husband works every day around the holiday, (except for Easter itself of course). And if there is anything good in the movies we will probably catch a movie too. My children will be with their dads family (along with my grandchildren).

I will see my grandchildren this coming Saturday when we have them for the day, and then my children (and all) will be here later for an Italian dinner. :-)

This Easter, we are going to my married daughter's home for dinner. She lives about an hour away from us in a gorgeous home on the beach, I love being near the water. I'm not thrilled that her inlaws will be there, rather I'm not thrilled that her mil will be there. She is a nice woman, we are just very different people. We don't have much in common. She's one of those people who never stops talking, like NEVER. If there's any lull at all in the conversation, she fills it up with pointless chatter. My ears hurt after an hour with her. But our kids are married to each other; we'll share grandchildren some day; so I accept that she's a part of my life now. The good part is that she is a marvelous cook and she's making the desserts. Hubby and will bring wine and a plant.
